Leftover Bananas for Bananas Muffins

Ingredients
  • 2 ripe bananas, medium-sized or 3-4 small ones
  • 2 tablespoons of butter, softened
  • 1 egg or ground flax-seed to water mixture
  • 1 tablespoon of honey
  • ½ teaspoon of vanilla
  • 1 teaspoon of baking powder
  • ¼ teaspoon of salt
  • ¼ teaspoon of cinnamon
  • 1 cup of quick steel-cut oats

Instructions

  1. preheat oven to 375 degrees
  2. In a large mixing bowl, combine all of the ingredients and mix well
  3. Spoon into greased or lined mini muffin tin pans
  4. Bake for 20 minutes
  5. Store in airtight container to keep well

Makes about 18-22 mini muffins
