
- 2 ripe bananas, medium-sized or 3-4 small ones
- 2 tablespoons of butter, softened
- 1 egg or ground flax-seed to water mixture
- 1 tablespoon of honey
- ½ teaspoon of vanilla
- 1 teaspoon of baking powder
- ¼ teaspoon of salt
- ¼ teaspoon of cinnamon
- 1 cup of quick steel-cut oats
Instructions
- preheat oven to 375 degrees
- In a large mixing bowl, combine all of the ingredients and mix well
- Spoon into greased or lined mini muffin tin pans
- Bake for 20 minutes
- Store in airtight container to keep well
